Description

These Avocado Chicken Salad Lettuce Wraps are a light and refreshing meal perfect for a healthy lunch or dinner. With a combination of tender chicken, creamy avocado, and fresh veggies wrapped in crisp lettuce, it’s a delicious, low-carb, and protein-packed dish.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 ripe avocado, mashed
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 8 large lettuce leaves (romaine or butter lettuce)
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine the shredded chicken and mashed avocado.
  2. Add Greek yogurt, lemon juice, Dijon mustard, and mix until well combined.
  3. Season with salt and pepper to taste.
  4. Place the lettuce leaves on a clean surface, and scoop about 1/4 cup of the chicken and avocado mixture into each leaf.
  5. Add diced cucumber and red onion on top for extra crunch and flavor.
  6. Roll the lettuce leaves into wraps and serve immediately.
  7. Garnish with fresh parsley and enjoy!

Notes

  • You can prepare the chicken and avocado mixture ahead of time and store it in the fridge for up to 24 hours.
  • For extra crunch, add sliced bell peppers or radishes to the wrap.
