Ingredients

- 2 cups cooked, shredded chicken
- 1 ripe avocado, mashed
- 2 tbsp Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp Dijon mustard
- Salt and pepper, to taste
- 8 large lettuce leaves (romaine or butter lettuce)
- 1/2 cup diced cucumber
- 1/4 cup red onion, finely chopped
- Fresh parsley, for garnish
Instructions
- In a large bowl, combine the shredded chicken and mashed avocado.
- Add Greek yogurt, lemon juice, Dijon mustard, and mix until well combined.
- Season with salt and pepper to taste.
- Place the lettuce leaves on a clean surface, and scoop about 1/4 cup of the chicken and avocado mixture into each leaf.
- Add diced cucumber and red onion on top for extra crunch and flavor.
- Roll the lettuce leaves into wraps and serve immediately.
- Garnish with fresh parsley and enjoy!
Notes
- You can prepare the chicken and avocado mixture ahead of time and store it in the fridge for up to 24 hours.
- For extra crunch, add sliced bell peppers or radishes to the wrap.
