Description

A soft and buttery Filipino brioche topped with creamy butter and grated cheese, perfect for breakfast or as a snack. This classic treat is known for its pillowy texture, rich flavor, and indulgent cheesy topping, making it a favorite among Filipinos and pastry lovers alike.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp active dry yeast
  • 1/2 cup warm milk
  • 1/4 cup butter, softened
  • 1 egg
  • 1/2 tsp salt
  • 1 cup grated cheese (preferably cheddar or a blend of mozzarella and cheddar)
  • 2 tbsp butter (for topping)
  • 2 tbsp sugar (for topping)

Instructions

  • Activate the yeast: In a small bowl, mix the warm milk and sugar together, then add the yeast. Let it sit for 5 minutes until it becomes frothy.
  • Prepare the dough: In a large bowl, combine the flour, salt, and the yeast mixture. Add the egg and softened butter. Knead for 8-10 minutes until the dough becomes smooth and flexible.
  • Let the dough rise: Cover the dough with a clean towel and let it rest in a warm area for 1 hour, or until it doubles in size.
  • Shape the ensaymada: Gently punch down the dough and divide it into equal portions. Roll each portion into a ball and flatten it into a disk. Place grated cheese in the center and roll it into a spiral shape.
  • Bake the ensaymada: Preheat the oven to 350°F (175°C). Arrange the ensaymadas on a baking sheet lined with parchment paper. Bake for 15-20 minutes until golden brown.
  • Add the topping: While the ensaymadas are baking, melt the butter and mix it with sugar. Once the ensaymadas are done, brush the butter-sugar mixture on top, and sprinkle with more grated cheese.

Notes

  • You can experiment with different cheeses like mozzarella, gouda, or even cream cheese for a different twist.
  • Try freezing the dough for later use, and simply thaw it overnight in the fridge before baking.
