  • 2 cups cooked wild rice
  • 2 cups cooked, shredded chicken
  • 1 cup cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix wild rice, chicken, soup, broth, vegetables, onion, garlic, thyme, salt, and pepper in a bowl.
  3. Transfer to a greased 9x13 inch dish, top with cheese, then breadcrumbs mixed with melted butter.
  4. Bake covered for 25 minutes, then uncover and bake 15 more until golden.
  5. Let cool briefly before serving. Enjoy!

Notes

For a creamier texture, add a splash of milk or cream before baking.
