Ingredients
  

Dry ingredients
  • 1 1/2 cups gluten-free flour such as almond or oat flour
  • 1 teaspoon baking soda
Wet ingredients
  • 3 ripe bananas mashed bananas about 1 1/2 cups mashed
  • 1/3 cup honey or maple syrup
  • 1/4 cup olive oil
  • 2 eggs large eggs

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash bananas and mix in honey, oil, and eggs.
  3. Add gluten-free flour and baking soda to the wet mixture and stir until combined.
  4. Pour batter into the prepared loaf pan and smooth the top.
  5. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before slicing and serving.

Notes

Use ripe bananas for best flavor and sweetness.
