Ingredients
  

Protein
  • 1 lb Ground Turkey lean
  • 1 cup Salsa Verde
  • 1 cup Cooked Quinoa for added protein and fiber
Vegetables
  • 1 cup Chopped Bell Peppers
  • 1 cup Chopped Spinach
Dairy & Spices
  • 1 cup Low-fat Shredded Cheese
  • 1 tsp Cumin
  • to taste Salt & Pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook ground turkey with cumin, salt, and pepper until browned.
  3. Mix cooked turkey, salsa verde, quinoa, spinach, and half of the cheese in a bowl.
  4. Transfer mixture to a baking dish, top with remaining cheese, and bake for 20-25 minutes.
  5. Let sit for 5 minutes before serving. Enjoy!

Use lean ground turkey for a healthier option.
