Ingredients
  

Meat and Beans
  • 1 lb ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • to taste Salt and pepper
  • 1 bag tortilla chips (optional, for serving)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook ground beef until browned; drain excess fat.
  3. Add beans, corn, tomatoes, rice, seasoning, salt, and pepper; mix and heat.
  4. Stir in sour cream and half the cheese; transfer to a greased dish.
  5. Top with remaining cheese, bake 20-25 mins, then garnish with cilantro.

Notes

For extra flavor, add hot sauce or diced jalapeños.
