  • 2 cups cooked quinoa
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper diced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional)
  • 1 pound ground turkey or chicken (optional)
  • 1 tablespoon olive oil for cooking
  • 1 onion diced
  • 4 cloves garlic, minced
  • 2 cups chopped spinach or kale
  • 1 cup vegetable or chicken broth

Method
 

  1. Heat olive oil and sauté onions and garlic until softened.
  2. Add ground turkey or chicken (if using) and cook until browned.
  3. Stir in bell pepper, corn, spinach, and cook until vegetables are tender.
  4. Mix in cooked quinoa, beans, tomatoes, spices, and cheese (if using). Cool slightly.
  5. Divide into containers, label, and freeze. Thaw overnight before reheating.
