Ingredients
  

Meat
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup gluten-free pasta (elbow or penne)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp chili powder
  • 1 tsp cumin
  • to taste Salt and pepper
  • 1 cup beef broth or water
  • 1 tsp olive oil
  • optional Fresh herbs for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook onion and garlic in olive oil until translucent. Add ground beef and cook until browned.
  3. Mix in tomatoes, beans, corn, spices, salt, and pepper. Add pasta and broth, stir well.
  4. Transfer to a greased dish, top with cheese, cover, and bake for 25 minutes. Uncover and bake 10-15 more minutes.
  5. Let cool briefly, garnish with herbs if desired, and serve.

Notes

Use gluten-free pasta to keep the dish gluten-free. Feel free to add your favorite herbs for extra flavor.
