Ingredients
  

Vegetables
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 large potato, peeled and diced
Broth and Tomatoes
  • 6 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste salt and pepper
Greens and Protein
  • 2 cups fresh spinach or kale
  • 1 cup cooked beans (cannellini or kidney)
Garnish
  • optional fresh parsley for garnish

Method
 

  1. Heat olive oil in a large pot, sauté onion and garlic until translucent.
  2. Add carrots and celery, cook until vegetables soften.
  3. Stir in potatoes, broth, tomatoes, thyme, and oregano; bring to a boil.
  4. Simmer for 20 minutes until potatoes are tender, then add greens and beans; cook 5 more minutes.
  5. Season with salt and pepper, garnish with parsley if desired, and serve hot.
