  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 4 cups green beans, trimmed
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup grated Parmesan cheese
  • 1 medium zucchini, spiralized
  • 1 cup marinara sauce
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small head cabbage, shredded
  • 1/2 cup carrots, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha optional
  • 2 green onions sliced for garnish
  • 1 teaspoon sesame seeds for garnish
  • 1 can (10 oz) enchilada sauce mild or spicy
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup black olives, sliced
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 4 medium zucchini, halved and seeds removed for boats
  • 1 packet taco seasoning
  • 1/4 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cups broccoli florets
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon honey optional
  • 2 green onions chopped for garnish

Method
 

  1. Cook ground beef with onion and garlic until browned, then add cauliflower rice and cook until tender.
  2. Stir in green peas (if using) and transfer mixture to a baking dish. Top with cheddar cheese and bake at 375°F for 10–15 minutes.
  3. For stir-fry, cook beef with garlic and ginger, then add green beans and peppers. Mix sesame oil, soy sauce, and rice vinegar; pour over and cook briefly. Garnish with sesame seeds and cilantro.
  4. Prepare creamy beef by cooking beef with onion and garlic, then add seasonings, cream, and spinach. Simmer until thickened and cheese melts. Garnish with parsley.
  5. Make zucchini noodles with marinara sauce, cook briefly, then top with Parmesan and basil. For stuffed zucchini, bake halved zucchinis with taco-seasoned beef and cheese, then garnish with cilantro.
