Method
- Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until translucent.
- Add ground beef; cook until browned, about 5-7 minutes.
- Stir in diced tomatoes, beans, broth, chili powder, cumin, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20-30 minutes, stirring occasionally.
- Add frozen corn; cook for 5 minutes. Serve hot with garnishes.
