Ingredients
  

Meat and Beans
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 1 cup frozen corn
  • 1 tablespoon olive oil
Garnishes and toppings
  • chopped cilantro for garnish
  • sour cream for serving
  • shredded cheese for topping

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until translucent.
  2. Add ground beef; cook until browned, about 5-7 minutes.
  3. Stir in diced tomatoes, beans, broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20-30 minutes, stirring occasionally.
  5. Add frozen corn; cook for 5 minutes. Serve hot with garnishes.
