  • 1 lb chicken breast, diced
Vegetables
  • 2 cups mixed vegetables (carrots, broccoli, bell peppers)
Oil
  • 2 tablespoons olive oil
Garlic
  • 2 cloves garlic, minced
Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
Salt and Pepper

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté garlic for 1 minute, then add diced chicken and season with salt, pepper, oregano, and paprika. Cook until browned, about 5-7 minutes.
  3. Add mixed vegetables and cook for 4-5 minutes until tender.
  4. Serve over cooked rice or quinoa, garnished with parsley if desired.
