Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté vegetables for 3-4 minutes until tender.
  3. Add diced chicken and cook for 2-3 minutes.
  4. Stir in rice, soy sauce, garlic, ginger, salt, and pepper; cook for 5-7 minutes.
  5. Garnish with chopped green onions and serve hot.
