Ingredients
  

Protein
  • 4 pieces boneless chicken breasts
Vegetables
  • 2 cups broccoli florets
  • 1 piece bell pepper, sliced
  • 1 cup cherry tomatoes
Seasonings & Oils
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • to taste N/A Salt and pepper
  • as desired N/A Fresh herbs (thyme, rosemary, or parsley)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix olive oil, lemon juice, salt, pepper, and herbs. Marinate chicken 10-15 mins.
  3. Place chicken and vegetables in a baking dish, drizzle with marinade.
  4. Bake for 25-30 mins until cooked. Rest before serving.

Notes

For extra flavor, add red pepper flakes before baking.
