Ingredients
  

Meat & Protein
  • 1 lb ground sausage for sausage and broccoli dish
  • 1 lb chicken thighs for chicken and rice
  • 1 can canned chicken for casserole
Vegetables & Legumes
  • 1 cup frozen broccoli for sausage and broccoli dish
  • 1 can chickpeas for chickpea salad
  • 1 cup diced tomatoes for lentil & potato soup
  • 1 cup white onions for lentil & potato soup
  • 1 cup white potatoes for lentil & potato soup
  • 1 cup lentils for lentil & potato soup
Dairy & Grains
  • 1 lb pasta for baked ziti and broccoli pasta
  • 1 cup parmesan cheese for broccoli pasta
  • 1 jar pasta sauce for baked ziti and spaghetti
  • 1 cup heavy whipping cream for sausage pasta
Bread & Baked Goods
  • 1 loaf French bread for pizza
  • 1 dozen buns for BBQ chicken sandwiches
Condiments & Seasonings
  • 1 bottle BBQ sauce for BBQ chicken sandwiches
  • to taste seasonings (salt, pepper, garlic, onion powder, Italian seasoning, red pepper flakes)

Method
 

  1. Cook sausage until browned, then add frozen broccoli and cook until tender. Mix with cooked rice, sprinkle cheese, and stir until melted.
  2. Mix chickpeas, chopped cucumber, bell pepper, tomatoes, feta, and dress with vinegar and olive oil. Toss well and serve.
  3. Sauté onions, add diced tomatoes, lentils, potatoes, seasonings, and water. Simmer until lentils and potatoes are tender. Add spinach and cook briefly.
  4. Cook pasta, drain, and combine with pasta sauce. Transfer to a casserole dish, top with cheese, and bake at 350°F for 25-30 minutes.
  5. Cook pasta and steam broccoli. Drain, then toss with olive oil, garlic, Parmesan, salt, and pepper. Serve hot.
  6. Cook chicken thighs in crockpot with water and seasonings. Shred cooked chicken, toss with BBQ sauce, and serve on toasted buns with veggies.
