Ingredients
  

Dairy & Seasonings
  • 1 tablespoon unsalted butter
  • 2 large yellow onions about 6 cups sliced
  • 1 8-ounce package cream cheese softened
  • 0.5 cup milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground pepper
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon cayenne pepper
Main Ingredients
  • 3 cups shredded cooked chicken breast
  • 2 cups cooked long-grain brown rice
  • 1.5 cups coarsely crushed crinkle-cut potato chips
Garnish
  • to taste chopped fresh chives for garnish

Method
 

  1. Melt butter and cook onions until softened and browned, about 15 minutes.
  2. Whisk cream cheese, milk, salt, pepper, onion powder, garlic powder, and cayenne until smooth.
  3. Stir in chicken and rice, layer in baking dish, top with onions, and bake at 375°F for 20 minutes.
  4. Top with potato chips and bake until bubbly, about 10 minutes. Garnish with chives.

Notes

For extra crunch, add more potato chips on top before baking.
