  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 15 ounce can tomato sauce
  • 10 ounce can diced tomatoes and green chilies (like Rotel), undrained
  • 4 cups beef broth
  • 1 pound pasta (rotini, penne, or elbow macaroni)
  • 4 ounce cream cheese, softened
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, avocado, cilantro

Method
 

  1. Brown ground beef in a pot, drain grease.
  2. Add onion, cook until softened (3-5 minutes).
  3. Stir in taco seasoning, tomato sauce, and diced tomatoes; simmer.
  4. Pour in beef broth and add pasta, stir well.
  5. Boil, reduce heat, cover, simmer 12-15 minutes, stirring occasionally.
  6. Remove from heat, stir in cream cheese until melted.
  7. Stir in cheddar cheese until melted.
  8. Serve with taco toppings.

Notes

Adjust taco seasoning to your preferred spice level.
