Meat
  • 1 lb ground turkey
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 cups diced butternut squash
  • 1 cup chopped kale
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper
  • Olive oil for cooking
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onions and garlic until translucent.
  3. Add ground turkey and cook until browned.
  4. Stir in butternut squash, cover, and cook for 10 minutes.
  5. Add kale, black beans, tomatoes, cumin, paprika, salt, and pepper; cook until heated through and kale wilts.
  6. Garnish with parsley and serve.
