Method
- Cook pasta in salted boiling water until al dente, then drain.
- Heat olive oil in a skillet over medium heat, sauté garlic for 1 minute.
- Add diced tomatoes and Italian seasoning; simmer for 5 minutes.
- Stir in spinach and cook until wilted, about 2 minutes.
- Add cooked pasta to skillet, toss, and season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese.
Notes
Feel free to add red pepper flakes for a spicy kick.
