- Preheat oven to 375°F (190°C).
- Sauté onion in olive oil until translucent.
- Stir in garlic and cook for 1 minute.
- Brown ground beef, breaking it apart.
- Season beef with salt and pepper, then mix in green chilies; cook 2 minutes.
- Quick-fry tortillas until pliable; drain on paper towels.
- Pour some enchilada sauce into a baking dish.
- Fill each tortilla with beef mixture and cheese; roll up tightly.
- Place rolled tortillas seam-side down in the dish.
- Pour remaining sauce over the top and sprinkle with cheese.
- Bake for 20 minutes or until cheese is melted and bubbly.
- Let rest, garnish with cilantro, and serve.
Notes
For a spicier kick, add a pinch of cayenne pepper to the beef mixture.
