  • 5 ounces arugula
Vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon grated Parmesan cheese
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. In a small bowl, whisk together olive oil, lemon juice, Parmesan cheese, Dijon mustard, salt, and pepper.
  2. Place arugula in a large bowl.
  3. Pour vinaigrette over arugula and toss gently to coat.
  4. Serve immediately.

Notes

For a richer flavor, use high-quality extra virgin olive oil.
