Baked Cranberry Brie Bites

  • 14.1 oz frozen puff pastry thawed
  • 4 oz brie cheese cut into 1-inch cubes
  • 1/2 cup cranberry sauce whole berry or jellied
  • 1/4 cup chopped pecans or walnuts optional
  • 1 egg beaten (for egg wash)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Lightly flour surface, unfold pastry, and gently roll thin.
  3. Cut pastry into 2-inch squares.
  4. Place squares into a mini muffin tin.
  5. Place a brie cube into each cup.
  6. Top each brie with 1 teaspoon cranberry sauce.
  7. Sprinkle nuts over cranberry sauce, if desired.
  8. Brush edges with beaten egg.
  9. Bake for 12-15 minutes, until golden brown and brie is melted.
  10. Let cool slightly before serving.

Notes

For a sweeter bite, use a flavored cranberry sauce or add a drizzle of honey after baking.
