Baked Feta Spaghetti Squash

  • 1 medium spaghetti squash
  • 200 g feta cheese
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for garnish Fresh basil

Method
 

  1. Preheat oven to 400°F (200°C). Cut squash in half and scoop out seeds.
  2. Place squash halves cut-side up on a baking sheet and bake for 40-45 minutes until tender.
  3. Mix cherry tomatoes, olive oil, garlic, oregano, salt, and pepper. Spoon into squash halves.
  4. Place feta in the center of each tomato mixture, drizzle with olive oil, and season.
  5. Bake until feta is golden, then scrape squash into strands and mix with toppings. Garnish with basil.

Notes

Use fresh basil for the best flavor and adjust salt and pepper to taste.
