Method
- Preheat oven to 400°F (200°C).
- Brush squash with 1 tbsp olive oil, season with salt and pepper.
- Place squash cut-side down on a baking sheet and bake for 40-50 minutes.
- Toss tomatoes with remaining olive oil, garlic, salt, and pepper.
- Flip squash, top with tomato mixture in the last 15 minutes of baking.
- Continue baking until tomatoes are softened.
- Remove from oven and scrape squash into strands.
- Stir in feta cheese and fresh basil.
- Serve immediately.
Notes
For a richer flavor, use roasted garlic instead of minced.
