Baked Feta Spaghetti Squash With Tomato

  • 1 medium spaghetti squash halved lengthwise and seeded
  • 2 tablespoons olive oil divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pint cherry tomatoes halved
  • 4 ounces feta cheese crumbled
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Brush squash with 1 tbsp olive oil, season with salt and pepper.
  3. Place squash cut-side down on a baking sheet and bake for 40-50 minutes.
  4. Toss tomatoes with remaining olive oil, garlic, salt, and pepper.
  5. Flip squash, top with tomato mixture in the last 15 minutes of baking.
  6. Continue baking until tomatoes are softened.
  7. Remove from oven and scrape squash into strands.
  8. Stir in feta cheese and fresh basil.
  9. Serve immediately.

Notes

For a richer flavor, use roasted garlic instead of minced.
