  • 2 medium Japanese sweet potatoes
  • 1 tablespoon olive oil optional
  • to taste salt salt optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes.
  3. Optionally, rub with olive oil and sprinkle with salt.
  4. Place on a baking sheet and bake for 45-60 minutes until tender.
  5. Let cool slightly before serving.

Notes

For extra flavor, add a sprinkle of cinnamon or a drizzle of honey before serving.
