  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas about 3 medium
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts walnuts or pecans (optional)
  • 1/2 cup chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. Cream butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. Add mashed bananas and mix well.
  5. Whisk together flour, baking soda, and salt in a separate bowl.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  7. If desired, stir in nuts and/or chocolate chips.
  8. Pour batter into the prepared pan and spread evenly.
  9. Bake for 25-30 minutes, or until a wooden skewer comes out clean.
  10. Let cool completely before cutting into squares.

Notes

For extra moist bars, use very ripe bananas with brown spots.
