Ingredients

  • 2/3 cup granulated sugar
  • 1/2 cup vegetable or canola oil
  • 2 large eggs
  • 2/3 cup mashed ripe banana about 2 small bananas
  • 1 teaspoon vanilla extract
  • 1 ⅔ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 tablespoons salted butter melted
  • 1/4 cup granulated sugar for topping
  • 1/2 teaspoon ground cinnamon for topping

Method
 

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Whisk together sugar, oil, and eggs in a bowl.
  3. Add mashed bananas and vanilla; mix well.
  4. Stir in flour, baking soda, cinnamon, and salt until just combined.
  5. Divide batter into muffin cups, filling about ¾ full. Bake for 16–21 minutes.

Notes
