Method
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- Whisk together sugar, oil, and eggs in a bowl.
- Add mashed bananas and vanilla; mix well.
- Stir in flour, baking soda, cinnamon, and salt until just combined.
- Divide batter into muffin cups, filling about ¾ full. Bake for 16–21 minutes.
