Ingredients

  • 3 pieces ripe bananas
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Mash bananas, then mix with oil, eggs, sugar, and vanilla.
  3. Combine dry ingredients and fold into wet mixture.
  4. Pour batter into loaf pan and bake for 65-70 minutes.
  5. Cool in pan 10 minutes, then transfer to wire rack.

Notes

You can add nuts or chocolate chips for extra flavor.
