Method
- Preheat oven to 350°F (175°C) and line muffin tin with liners.
- Mix dry ingredients in a bowl; combine wet ingredients in another, then combine both and fold in pecans.
- Fill muffin cups ¾ full with batter.
- Beat cream cheese, sugar, egg yolk, and vanilla to make swirl; add milk if needed.
- Spoon cream cheese mixture onto muffins and swirl; bake for 20 minutes.
Notes
For best results, use over-ripe bananas for extra sweetness and flavor.
