Method
- Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, salt, pepper, paprika, and garlic powder. Roast for 25-30 minutes until tender.
- While sweet potatoes roast, cook chicken breasts in 1 tablespoon olive oil over medium heat until cooked through, about 6-8 minutes per side. Shred or dice the cooked chicken.
- Warm BBQ sauce and toss with cooked chicken. Assemble bowls with roasted sweet potatoes, BBQ chicken, corn, black beans, avocado, red onion, cilantro, cheese, and green onions. Drizzle with additional BBQ sauce if desired.
