Ingredients
  

Protein
  • 1 pound boneless skinless chicken breasts about 2 large breasts
Vegetables
  • 2 medium sweet potatoes sweet potatoes peeled and diced into ½-inch cubes
  • 1 avocado avocado diced
Canned Goods
  • 0.5 cup canned corn drained
  • 0.5 cup black beans rinsed and drained
Seasonings & Sauces
  • 2 tablespoons olive oil divided use
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.25 cup BBQ sauce plus more for drizzling if desired
Toppings
  • 1 avocado diced avocado
  • 0.25 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 0.25 cup shredded cheese cheddar or Monterey Jack
  • 2 tablespoons sliced green onions

Method
 

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tablespoon olive oil, salt, pepper, paprika, and garlic powder. Roast for 25-30 minutes until tender.
  2. While sweet potatoes roast, cook chicken breasts in 1 tablespoon olive oil over medium heat until cooked through, about 6-8 minutes per side. Shred or dice the cooked chicken.
  3. Warm BBQ sauce and toss with cooked chicken. Assemble bowls with roasted sweet potatoes, BBQ chicken, corn, black beans, avocado, red onion, cilantro, cheese, and green onions. Drizzle with additional BBQ sauce if desired.
