Beef Mixture
  • 1 tablespoon olive oil
  • 1/2 large yellow onion diced
  • 1 pound lean ground beef 93/7
  • 1/4 cup chicken broth or water
  • 1 packet taco seasoning (1-ounce)
  • 2 tablespoons tomato paste
  • 1-1/2 teaspoons minced garlic
Sweet Potatoes
  • 6 cups diced sweet potatoes (2 large potatoes)
  • 2 tablespoons olive oil
  • 1-1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper
Other
  • White rice
  • Cilantro-lime sauce optional, for serving
  • Toppings as desired

Method
 

  1. Rice: Follow rice recipe for detailed instructions.
  2. Sweet Potatoes: Roast diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper at 425°F (220°C) for about 30 minutes, flipping every 10 minutes.
  3. Beef: Sauté onion, add ground beef, sear, crumble, and brown. Stir in broth, taco seasoning, tomato paste, and garlic. Cook until fragrant.
  4. Assemble: Divide rice among bowls. Top with sweet potatoes and beef mixture. Add toppings and cilantro-lime sauce if desired.
