Ingredients
  

  • 1.5 lbs beef sirloin cut into thin strips against the grain
  • 1 tbsp olive oil
  • 1 large onion chopped
  • 8 oz cremini mushrooms sliced
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 2 cups beef broth
  • 1/2 cup dry sherry (or dry white wine)
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt or to taste
  • 1 cup sour cream
  • 2 tbsp chopped fresh parsley for garnish
  • 1 lb egg noodles
  • 4 tbsp butter

Method
 

  1. Slice the sirloin into thin strips and season with salt and pepper.
  2. Sauté onions, mushrooms, and garlic until softened and browned.
  3. Sear the beef strips in batches until browned, then return the onion mixture to the skillet.
  4. Stir in flour, then add sherry, beef broth, mustard, Worcestershire sauce, paprika, pepper, and salt. Simmer for 20-25 minutes.
  5. Stir in sour cream and cook noodles according to package directions. Toss noodles in butter and combine with the Stroganoff mixture.
  6. Garnish with parsley and serve immediately.

Notes

For an extra creamy dish, add more sour cream. Garnish with fresh parsley and serve with additional sour cream on the side if desired.
