  • 2 lbs boneless, skinless chicken breasts
  • 1 bottle Greek dressing (16 ounce)
  • 1 lemon, juiced
  • 1/2 cup chicken broth
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup sun-dried tomatoes, oil-packed, drained
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Place chicken breasts in the crockpot.
  2. Whisk together Greek dressing, lemon juice, chicken broth, olives, sun-dried tomatoes, garlic, oregano, salt, and pepper in a bowl.
  3. Pour the mixture over the chicken breasts in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. Shred the chicken with two forks directly in the crockpot.
  6. Serve over rice, pasta, or in pita bread. Garnish with fresh parsley and feta cheese (optional).

Notes

For a thicker sauce, remove the shredded chicken and whisk 1-2 tablespoons of cornstarch with a little cold water. Stir into the sauce in the crockpot and cook on high for 15-20 minutes, or until thickened.
