Method
- Place chicken breasts in the crockpot.
- Whisk together Greek dressing, lemon juice, chicken broth, olives, sun-dried tomatoes, garlic, oregano, salt, and pepper in a bowl.
- Pour the mixture over the chicken breasts in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Shred the chicken with two forks directly in the crockpot.
- Serve over rice, pasta, or in pita bread. Garnish with fresh parsley and feta cheese (optional).
Notes
For a thicker sauce, remove the shredded chicken and whisk 1-2 tablespoons of cornstarch with a little cold water. Stir into the sauce in the crockpot and cook on high for 15-20 minutes, or until thickened.
