Ingredients
  

Eggs
  • 6 large eggs
  • 1 cup egg whites
Vegetables
  • 1 cup spinach, chopped
  • 1 diced bell pepper
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup onion, diced
Dairy & Cheese
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil, sauté onion and bell pepper until softened.
  3. Add spinach and cherry tomatoes, cook until spinach wilts.
  4. Whisk eggs, egg whites, cottage cheese, garlic powder, salt, and pepper.
  5. Mix veggies into egg mixture, pour into greased dish, top with cheese.
  6. Bake for 25-30 minutes until set and golden.
