  • 1.25 cups milk
  • 1 egg egg
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon sugar
  • 3 tablespoons melted butter or oil
  • 2 teaspoons vanilla extract

Method
 

  1. Whisk milk, egg, melted butter, and vanilla until blended.
  2. Sift flour, baking powder, salt, and sugar into the liquid, stirring minimally.
  3. Heat a non-stick skillet over medium, lightly greased.
  4. Ladle batter using 1/4 cup, cook until bubbles form and edges dry, 2-3 mins.
  5. Flip and cook 1-2 mins until golden, then serve warm with toppings.

Notes

For extra fluffiness, do not overmix the batter.
