Ingredients
  

Dry ingredients
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
Wet ingredients
  • 1 1/4 cups granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/3 cup water
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl.
  3. Combine sugars, oil, eggs, pumpkin, water, and vanilla; mix well.
  4. Add dry ingredients to wet; stir until just combined. Fold in nuts if using.
  5. Pour batter into pan and bake 60-70 minutes. Cool before serving.

Notes

For extra flavor, add a teaspoon of cinnamon or nutmeg to the dry ingredients.
