Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix pumpkin, oil, sugars, eggs, and vanilla until smooth.
- Combine dry ingredients and gradually add to wet mixture, mixing until just combined.
- Fold in nuts if using, then pour batter into pan.
- Bake for 60-70 minutes, cool in pan 10 minutes, then transfer to wire rack.
