Ingredients
  

Wet ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
Optional nuts
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, oil, sugars, eggs, and vanilla until smooth.
  3. Combine dry ingredients and gradually add to wet mixture, mixing until just combined.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 60-70 minutes, cool in pan 10 minutes, then transfer to wire rack.

Store in an airtight container for up to 3 days or freeze for longer storage.
