Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Pecan Topping
  • 1 cup pecans, chopped
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup melted butter

Method
 

  1. Preheat oven to 350°F (175°C). Boil sweet potatoes until tender, then drain and mash.
  2. Mix mashed sweet potatoes with sugar, milk, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt.
  3. Transfer mixture to a greased baking dish.
  4. Combine pecans, brown sugar, flour, and melted butter for topping, then sprinkle over casserole.
  5. Bake for 25-30 minutes until golden. Let cool slightly before serving.

Notes

For extra crunch, toast the pecans before adding to the topping.
