Method
- Preheat oven to 375°F (190°C). Line muffin tin with paper cups.
- Mix flour, pumpkin spice, baking soda, and salt. In a separate bowl, combine pumpkin, sugars, eggs, oil, and vanilla. Fold dry ingredients into wet until just combined. Fill muffin cups 3/4 full.
- Beat cream cheese with sugar, egg yolk, and vanilla until smooth. Drop spoonfuls onto batter and swirl with a toothpick.
- Bake for 18-20 minutes until a toothpick in the pumpkin part comes out clean. Cool for 10 minutes before serving.
Notes
Swirling the cream cheese creates a beautiful marbled effect, but dropping spoonfuls works just as well.
