Salad Ingredients
  • 15 oz black beans drained and rinsed
  • 15 oz corn drained (or 2 cups fresh or frozen corn)
  • 1 medium red bell pepper diced
  • 1 medium cucumber diced
  • 1 small red onion finely chopped
  • 1/4 cup fresh cilantro chopped (or parsley for an alternative)
Dressing Ingredients
  • 2 limes Juice of (or 1/4 cup lemon juice for a twist)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper

Method
 

  1. Rinse black beans and corn under cold water and drain well.
  2. Dice the red bell pepper, cucumber, and red onion into bite-sized pieces.
  3. In a large bowl, mix black beans, corn, bell pepper, cucumber, and red onion.
  4. In a small bowl, whisk lime juice, olive oil, cumin, salt, and pepper.
  5. Pour dressing over salad, add cilantro, and toss gently.
  6. Taste and adjust seasoning. Serve immediately or chill.

Notes

For a spicier kick, add a pinch of cayenne pepper to the dressing.
