Ingredients
  

Rice and Beans
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
Sausage
  • 1 pound smoked beef sausage, sliced
Vegetables and Seasonings
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste Salt and pepper
  • 2 tablespoons olive oil
Garnish
  • Optional Fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat. Cook sausage until browned, then remove.
  2. Sauté onion, bell pepper, and garlic until softened. Add cumin and paprika, cook for 1 minute.
  3. Stir in rice, then add chicken broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  4. Gently fold in black beans and sausage, season with salt and pepper. Serve hot, garnished with cilantro if desired.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
