Ingredients
  

Blackened Seasoning
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper adjust for spice preference
  • to taste Salt and pepper
Mahi Mahi
  • 4 Mahi Mahi fillets
  • 2 tablespoons olive oil
  • 1 lime cut into wedges
Mango Salsa
  • 1 ripe mango peeled and diced
  • 1 cup diced tomatoes
  • 1/4 cup red onion finely chopped
  • 1 tablespoon fresh cilantro chopped
  • 1 tablespoon lime juice
  • to taste Salt and pepper

Method
 

  1. Mix paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and pepper.
  2. Pat fillets dry and rub with seasoning.
  3. Heat oil, cook fish 3-4 minutes per side.
  4. Combine mango, tomatoes, red onion, cilantro, lime juice, salt, and pepper.
  5. Serve fish with lime juice, mango salsa, and lime wedges.

Notes

For a milder flavor, reduce the amount of cayenne pepper in the blackened seasoning.
