Ingredients
  

Chicken Salad
  • 2 cups cooked chicken breast, diced About 2 large breasts.
  • 6 slices turkey bacon
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 1 teaspoon fresh lemon juice Optional

Method
 

  1. Cook turkey bacon until crispy, then crumble.
  2. Cook chicken until browned, then dice.
  3. Whisk together mayonnaise, Greek yogurt, Dijon mustard, garlic powder, lemon juice, salt, and pepper.
  4. Combine lettuce, tomatoes, chicken, and bacon. Pour dressing over salad and toss.
  5. Serve immediately.
  6. Consider adding avocado or shredded cheese.
  7. Keep dressing separate until serving.

Notes

For a lighter version, use light mayonnaise and more Greek yogurt.
