  • ½ teaspoon baking powder
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, softened until creamy (coconut oil works for dairy-free)
  • 1 cup granulated sugar (or coconut sugar for a more caramel-like flavor)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Zest of one lemon, freshly grated for bright aromatic notes lemon zest
Blueberries
  • cups fresh blueberries (or frozen, unthawed for year-round baking)
  • ¼ teaspoon almond extract (optional for depth of flavor) optional

Method
 

  1. Preheat oven and prepare workspace.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar until fluffy.
  4. Add egg, vanilla, and lemon zest; mix well.
  5. Combine wet and dry, then fold in blueberries.
  6. Scoop onto baking sheet and bake until golden.

Notes

For a gluten-free version, substitute almond flour for all-purpose flour.
