  • 1 head broccoli steamed and chopped
  • 1 cup panko breadcrumbs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg beaten
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or cooking spray

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Combine broccoli, breadcrumbs, cheeses, egg, garlic, salt, and pepper in a bowl.
  3. Mix well until evenly distributed.
  4. Shape into small tot shapes.
  5. Place on a baking sheet lined with parchment paper.
  6. Drizzle with olive oil or spray with cooking spray.
  7. Bake for 20-25 minutes, flipping halfway through.
  8. Let cool slightly before serving.

Notes

For a crispier tot, broil for the last 2 minutes, watching carefully to prevent burning.
