Dough
  • 1 cup butter (softened)
  • 2 cups brown sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 cups old fashioned oats

Method
 

  1. Preheat oven to 350°F (180°C). Line baking trays with parchment.
  2. Mix flour, baking soda, and salt in a bowl. Set aside.
  3. Cream butter and brown sugar until light. Add vanilla and eggs, mixing well.
  4. Combine dry ingredients with wet, then stir in oats.
  5. Drop spoonfuls onto baking sheets, bake for 11-13 minutes until edges are golden.

Notes

For softer cookies, bake for the shorter time; for crunchier, bake longer.
