Ingredients
  

Vegetables
  • 1 large eggplant diced
  • 1 pound shrimp peeled and deveined
  • 1 cup cooked rice
  • 1 diced bell pepper
  • 1 chopped onion
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup shredded cheddar cheese
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • to taste Salt and pepper Salt and pepper
  • for garnish Fresh parsley parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Sauté eggplant in olive oil until softened, then add onion, bell pepper, and garlic; cook until tender.
  3. Add shrimp and cook until pink. Mix in rice, tomatoes, Cajun seasoning, salt, and pepper.
  4. Transfer to a casserole dish, top with cheese, and bake for 20-25 minutes until bubbly.
  5. Garnish with parsley before serving.

Notes

Use fresh parsley for best flavor and adjust seasoning to taste.
