Method
- Heat olive oil in a large pot over medium heat.
- Add rice and toast for 2-3 minutes, then pour in broth, garlic powder, onion powder, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add broccoli and shredded chicken, cook for 5-7 minutes until tender.
- Stir in shredded cheddar until melted. Serve warm.
Notes
You can substitute cooked turkey or add extra vegetables for variation.
