Ingredients
  

Rice and Broth
  • 1 cup uncooked rice
  • 2 cups chicken broth
Protein
  • 1 cup cooked chicken, shredded
Vegetables
  • 2 cups broccoli florets
Dairy
  • 1 cup sharp cheddar cheese, shredded
Oils and Seasonings
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add rice and toast for 2-3 minutes, then pour in broth, garlic powder, onion powder, salt, and pepper. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Add broccoli and shredded chicken, cook for 5-7 minutes until tender.
  5. Stir in shredded cheddar until melted. Serve warm.

Notes

You can substitute cooked turkey or add extra vegetables for variation.
