Ingredients
  

Dough
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
Cheesecake filling
  • 8 ounces cream cheese softened
  • 1/4 cup granulated sugar for filling
  • 1/2 teaspoon vanilla extract for filling
  • 1 large egg yolk

Method
 

  1. Preheat oven to 350°F and line baking sheet with parchment.
  2. Mix dry ingredients; set aside. Cream butter and sugars, add eggs and vanilla.
  3. Combine dry and wet, fold in chocolate chips. Prepare cheesecake filling.
  4. Assemble cookies with filling, bake 10-12 minutes, cool before serving.

Notes

Chill the cheesecake filling for better consistency before filling cookies.
