  • 1/2 cup fresh basil, roughly chopped
  • 1/2 cup red sweet pepper, finely chopped

  • 1 bag Doritos nacho cheese (11 oz)
  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 8 oz Cheddar cheese, grated
  • 1 can diced tomatoes and chiles (10.5 oz)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 cup pico de gallo
  • 1 Tbsp olive oil
  • 1 medium onion, chopped
  • 1/2 green bell pepper chopped
  • 1/2 red bell pepper chopped
  • 2 andouille sausages cut into 1-inch pieces
  • 2 large chicken breasts, cubed
  • 1 15 oz can tomato sauce
  • 2 cups chicken stock
  • 1 tsp Cajun seasoning
  • 1 1/4 cup long-grain white rice, uncooked
  • 2 lbs boneless skinless chicken breasts
  • 1/2 medium onion, chopped
  • 2 medium sweet potatoes, cubed
  • 1 lb Brussels sprouts, quartered
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 cup low-sodium chicken broth
  • 6 cups wild rice, cooked
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds
  • 3 cloves garlic, minced
  • 1 cup Parmesan cheese, grated

Method
 

  1. Cook rice and prepare the ingredients.
  2. Cook chicken thighs and sauté vegetables with garlic and seasonings.
  3. Combine cooked rice, chicken, vegetables, and cheese; bake until golden.
  4. Prepare the cheesy broccoli chicken and rice casserole and bake for 60 minutes.
  5. Assemble the nacho casserole with crushed chips, chicken mixture, and cheese; bake until melted.
  6. Cook and season the sausage and chicken, then bake with rice and vegetables for 40 minutes.
